Wheat starch is a fine, white and odorless powder. This type of flour has had gluten completely removed.

Wheat starch powder is essentially the starch of wheat flour and has a number of uses as follows:
Creates toughness and improves color (white)
Creates a crispy, spongy texture
Creates firmness for green bean filling
